Super Bowl Cake Footballs

Are you ready for some cake footballs!!!!

Recipe:
  • Make your favorite vanilla cake or use cake scraps from carving or leveling cakes (about 9 cups crumbled cake)
  • 1.5 cups frosting (I used this Milk chocolate buttercream )
  •  2 bags chocolate melts
  • Vegetable oil (optional)
  • 1/2 bag white chocolate melts
This recipe will make about 40 cake footballs.

Directions:
Bake the vanilla cake and allow to cool completely before crumbling into a large bowl. If you are like me and bake often enough to have cake left over from previous recipes this is the time to put it to use!!
Here is my crumbled green vanilla and funfetti cake.  Which is perfect since I'll be rooting for the EAGLES in Super Bowl 52 this weekend!

Add 1.5 cups of frosting  to the crumbled cake (~9 cups) and mix by hand.  If you see dry cake spots as seen below add a bit more frosting and mix until all of the cake is moistened.  Be careful not to add too much frosting, otherwise the cake balls may fall apart.

To make uniform sized balls use a 1in cookie scoop then roll them into the football shape by hand.

Refrigerate or freeze cake footballs while you melt the chocolate, this will help them hold their shape.
You can melt the chocolate melts in the microwave, but recommend the Wilton Chocolate Melting Pot.  Adding a little vegetable oil to the chocolate to make it smoother and help to coat the cake pops.

After coating the cake footballs in the melted chocolate gently shake off the excess chocolate.   For the football stitching use the white chocolate.  I used my Wilton Candy Melt-N-Decorate Bottle to get the lines just right.  It also allows you to melt in the microwave directly in the bottle.
If you do not have the bottle simply melt the chocolate and use a piping bag, or even a ziploc bag to pipe the lines on.

Happy baking!  Hope you enjoy the big game and these delicious cake pops!
